Rajma Tacos
Ingredients
Rajma Filling
- Rajma (Red kidney beans)
- cooked or tinned – 1 cup
- 1 inch Garlic
- 1 Onion
- 1 Tomato Puree
- 2 Fresh Red Ripe Chili (or Spicy Green Chilies)
- ¼ cup Coriander Leaves
- 1 tsp Everest Black Pepper Powder
- 3 tbsp Olive Oil
- Salt
- Everest Rajma Masala
To Serve
- 10 Taco Shells
- 1 Onion
- 1 Tomato
- ¼ cup Coriander Leaves
- 2 tsp Lemon Juice
- 3 tbsp Sour Cream
- 4 tbsp Grated Cheese
Instructions
- Preheat oven at 180ºC. Arrange the taco shells in a baking tray and put it in the oven. Leave a little between them space so that it gets heated evenly.
- Once done, leave it in the oven for 3 – 4 mins.
- Heat oil and fry finely chopped garlic and green chillies. Now add chopped onion and fry until transparent. Add coriander leaves.
- Add pureed tomato, Everest Rajma Masala and Everest Black Pepper Powder. Fry until oil separates.
- Add cooked rajma and mix well. Add required salt, water ½ cup and simmer for 5 mins or until it turns semi dry.
- Take a crisp taco shell, add a layer of rajma and then top it with some sour cream.
- Add onion, tomatoes and grated cheese.
- Serve deliciousTacos immediately.
