KOLHAPURI CHICKEN CURRY with CHICKEN MASALA
Ingredients
For Paste
- 1 Tsp Oil
- 2 Tbsp Everest Red Chilli Powder
- 7-8 Black Peppercorns
- 2 Star Anise
- 2 Inch Cinnamon stick
- 2 Green Cardamoms
- 2 Black Cardamoms
- 3-4 Cloves
- 1 Tsp White Sesame Seeds
- 1 Tsp Poppy Seeds
- Water As required
For cooking
- 4 Tbsp Oil
- 1 Cup Chopped Onion
- 1 Tbsp Ginger Garlic Paste
- 500 Gms Chicken
- 1/4 Tsp Turmeric Powder
- 1 Tsp Chicken Masala Powder
- 3/4 Cup Coconut Paste
- Water As Required
- Salt To Taste
- 2 Tsp Lemon Juice
- 1-2 Tbsp Chopped Coriander Leaves
Instruction
- Heat 1 Tbsp oil in hot kadhai. Add 7-8 Black pepper corns, 2 Star anise, 2 inches Cinamon sticks, 2 Green cardamom pods, 2 black cardamom, 3-4 clove, 1 Tsp White seasam seeds and 1 Tsp Poppy seeds. Roast raw spices on medium heat for 2-3 minutes. Leave it for cool down.
- In mixer grinder transfer the spices, add 2 Tbsp Everest Red Chilli Powder. Pour water (as required) and make a smooth paste.
- Add 4 Tbsp oil in broad pan. Add 1 Cup Chopped Onion. Stir fry till it turns golden brown. Add Tbsp Ginger Garlic paste. Sauté well.
- Now add masala paste in pan. Keep stir fry till oil oozes out.
- Add 500 Gms Chicken. Then add 1/2 Tsp Everest Turmeric Powder, 1/2 Tsp Everest Kashmirilal Red Chillie Powder, 1 Tsp Everest Coriander Powder, 1/2 Tsp Everest Cumin Powder, Salt to taste and 2 Tsp Everest Chicken Masala Powder and Mix Chicken with spices well. Now add 3/4 Cup Coconut Paste. Mix again.
- Add water (as per required) Salt to Taste and Cover cook for 10 minutes on medium flame.
- Now add 2 Tsp Lemon Juice and garnish 1-2 Tbsp Chopped Coriander Leaves on top of it.
- Serve hot with Rice, Roti Or Tandoor.
