Veg Kolhapuri
Ingredients
For sabji
- ½ diced Potato
- 1 diced Carrot
- 5 Beans
- 1 cup Cauliflower
- 3 cups Water
- 1 chopped Onion
- ½ chopped Capsicum
- Salt
- 3 tbsp Oil
- 1 tsp Ginger-Garlic Paste
- 2 chopped Tomatoes
- ½ tsp Everest Turmeric Powder
- Coriander Leaves
- 1 tsp Everest Sabji Masala
For masala
- 1 tsp Sesame Seeds
- ½ tsp Cumin Seeds
- 1 tsp Coriander Seeds
- 1 inch Cinnamon Stick
- 2 Cloves
- 1 Cardamom Pod
- 4 Black Pepper
- 3 Dried Kashmiri Red Chili
- 2 tbsp Desiccated Coconut
Instructions
Making the Masala
- In a kadai dry roast, sesame seeds, poppy seeds, coriander seeds, cumin seeds.
- Add cinnamon, cardamom, cloves, pepper, red chili and coconut.
- Blend without adding any water. Keep aside.
Making Veg Kolhapuri
- Boil vegetables along with little salt for 10 mins.
- Heat oil and sauté onions and ginger-garlic paste.
- Add tomato, the prepared masala, Everst Sabji Masala, Everest Turmeric and salt.
- Sauté well till the oil separates from the masala.
- Add boiled vegetables, water add coriander leaves.
- Cover and simmer for 15 mins.
- Serve Veg Kolhapuri with tandoori roti or garlic naan.
